Lemon Meringue Pie


Lemon Meringue Pie

This is my favorite pie! This recipe is for a 9 ” pie plate. If you want to make a bigger pie , the ingredients can be doubled.

1 pie crust baked

1 cup of sugar

2 tbs flour

3 tbs cornstarch

1/4 tsp salt

1 and 1/2 cup water

2 lemons – juice and zest

2 tbs butter

4 egg yolks beaten

for the meringue:

4 egg whites

6 tbs sugar

1/2 teaspoon cream of tartar

Whisk 1 cup of sugar, flour, cornstarch, and salt. Stir in water, juice, and zest. Cook over medium heat, stirring to a boil. Stir in butter, and remove from heat.

Place egg yolks in small bowl and whisk in a little lemon mixture to yolks. Whisk yolks back into lemon mixture and bring back to a boil. Remove from heat. Let cool slightly, and pour pudding into pie shell.

Whip egg whites in large bowl. Add sugar and cream of tartar. Mix till soft peaks form and become stiff. By using rubber spatula, spread meringue over pudding, making sure all edges are covered. Decorate by taking spatula and lifting  meringue up so they look like mountain peaks.

Bake in 350 degree oven for 10 to 12 minutes, till peaks begin to turn golden  brown.
