Mushroom and Brussels Sprouts Quiche


  • 1-(9-10 ) inch   pie crust (not cooked)
  • 6 whole eggs
  • 2 egg yolks
  • 1 pint heavy or light  cream
  • 2 tablespoons butter
  • 2 cloves of garlic diced fine
  • 8 oz of brussels  sprouts (quartered)
  • 6 oz of sliced mushrooms
  • 6 oz of grated cheddar cheese
  • pinch of nutmeg
  • salt and pepper to taste
  • 400 degree oven
Make pie crust and set aside. Begin by blanching brussels sprouts in boiling water for 5 minutes or until tender. Drain in strainer and set aside. Melt butter in saute pan and saute garlic for a couple of minutes and  then throw in the mushrooms and saute till limp. Combine the sprouts together in the pan with mushrooms  and saute another minute and drain them back in the strainer to remove the liquid and butter and cool slightly. Take 3 oz of the cheese and spread in bottom of pie shell. Place mushroom/sprouts mixture on top of the cheese and spread evenly. Mix the 6 whole eggs and 2 egg yolks together in a bowl and whisk briskly. Add the cream to the bowl and whisk till combined. Add salt and pepper and nutmeg and mix together and pour egg mixture on top of mushroom/sprouts in pie shell. Take remaining cheddar cheese and spread over the top of the pie. Press down on the cheese with your hands  so it mixes into the egg and is covered fully. Place pie  on a baking sheet and  bake in a 400 degree oven for 35-40 minutes till lightly brown on top and top feels solid and shows no sign of liquid and does not wobble.

  1. Cream, eggs & cheese! Mmm, that’s right, there’s vegetables too 🙂 my guy love mushrooms perhaps I can trick him into eating the Brussels sprouts at the same time, lol 🙂

  4. I am always looking for new ways to use brussels sprouts. Never thought about putting them in quiche! Yum!
